Easy Banana Bread
This banana bread comes out great every time I make it. I’ve made it as one loaf, I’ve doubled it to make two loaves, and recently (in the picture above), I’ve made three mini loaves. The mini loaves are actually strawberry banana bread. We went strawberry picking on Mother’s Day and had a ton of leftover strawberries after making other treats, so I threw about 1/2 cup of lightly mashed berries in this bread batter and it was delicious! This recipe is adapted from Simply Recipes.
Banana Bread Ingredients
1-3 bananas (overripe/brown are best!)
If you’re just using bananas, use 2 or 3 bananas. If you’re adding strawberries, blueberries, or anything else, 1-2 bananas are fine.
1/3 cup unsalted butter, melted
1/2 tsp baking soda
Up to 3/4 cup sugar
I usually use around 2/3 cup
1 egg, beaten
1 tsp vanilla extract
1/2 cup whole wheat flour
1 cup white flour
You could alternatively use all white or all wheat flour. If you opt for all wheat flour, though, your batter may be very thick and your bread will likely turn out more dense.
Optional: milk or semi-sweet chocolate chips, nuts of your choosing, additional fruit, or any other mix-ins you might like.
Instructions
Preheat the oven to 350 degrees F.
Butter, grease, or Pam your pan(s).
8x4 inch loaf pan, muffin tins, mini muffin tins, mini loaf pans - all work great!
Mash the bananas in a bowl with a fork or potato masher.
Pour in the melted butter and stir until mostly smooth.
Mix in the baking soda, sugar, egg, vanilla extract, flour(s), and any other mix-ins you’re using, if applicable.
Pour the batter into your pan(s).
Bake according to the table below.
Remove from oven and let cool on wire rack(s).
Banana Bread Bake Time
8”x4” pan(s): 50-60 minutes
3 mini loaves: 35-40 minutes
Mini muffins: 20-30 minutes
I haven’t tried mini muffins with this recipe, but I imagine the smaller size would require less time in the oven. If you try these, let me know how this bake time estimation works!
